Sugar-Free Healthy Sweet Treats

By  |  0 Comments

Today I’ve teamed up with New Zealand’s leading food site to share my favourite sugar-free snacks. Ditching sugar has never been so easy thanks to these healthy, easy-to-make tasty treats. Simply keep a stash of these raw food balls in the fridge for when those sugar cravings really start to bite. Not only are they good for you but they’re also really high in protein so they’ll keep you feeling fuller for longer too – that’s what I call a sweet treat with benefits.

Vanilla & Goji Bliss Balls

The combination of coconut, vanilla, goji berry and lemon make these balls the perfect afternoon pick-me-up. You can double the batch and keep these treats in the freezer for a regular supply of energy bites.

Above: Vanilla & Goji Bliss Balls.

1 cup of cashews

1 cup of desiccated coconut

1 lemon juice, plus rind

1 tbsp. vanilla essence

1 to 2 tbsp. of gojis

1/3 cup of water (or malt syrup)

1 pinch salt

1) In a food processor, blend cashews, coconut, half of the gojis and salt until a fine flour.

2) While the blender is running add the lemon juice, rind, the water (or maple syrup) and vanilla essence until you get a dough-like consistency.

3) Add the other half of gojis for crunch and blend for a further minute.

4) Roll the mixture into 50 cent size balls. Store in fridge until firm, approx. 15 mins

 Superfood Chocolate Energy Balls

The caramel-like taste of the medjool dates mixed with the rich cacao and the nuttiness from the almonds and walnuts blend together to make the most divine raw bites of chocolate-fudgy goodness. Boost the nutrient stakes by adding your favourite superfood toppings. My faves are coconut, chia seeds, cacao nibs and sesame seeds. The combinations are endless and only limited by your imagination.

4) Finish by rolling in your favourite superfood topping.
