Simple Healthy Lunches For Noodle Lovers

When a huge box of Maggi’s new and improved Invisible Whole Grain Noodles (previously Extra Delicious) arrived on my desk I decided to hit the kitchen and start creating. I’ve always wanted to come up with a few tasty lunches that can be prepared ahead of time and whipped out of the fridge when those midday hunger pangs start to kick in. I also thought it was time to invest a little more effort into my lunches so I can spend less time in the kitchen at night and more time outdoors enjoying the long summer evenings. With this in mind I’ve created three simple, delicious and nutritious lunches that are sure to have your workmates seeing green. The Spinach Noodle Bake is on regular rotation in our house – it’s that good! So why not join me in kicking off summer in style with some tasty new meal ideas! Sesame Noodles with Chicken and Broccoli

Ingredients

  • 1/4 cup soy sauce
  • 3 Tbsp honey
  • 2 1/2 Tbsp sesame oil
  • 2 Tbsp rice vinegar
  • 3 x packets of Maggi Invisible Whole Grain noodles
  • 1 head of broccoli diced into florets
  • 2 chicken breasts, sliced into small strips
  • 1 Tbsp canola or vegetable oil
  • 1 Tbsp minced garlic
  • 1 Tbsp peeled and minced ginger
  • 1 1/2 Tbsp sesame seeds

Directions

  1. In a small mixing bowl whisk together soy sauce, honey, sesame oil, rice vinegar and set aside.
  2. Cook noodles according to directions on packet and drain.
  3. Heat oil in a large fry pan over medium-high heat. Add chicken strips and cook until pieces are golden brown, toss in garlic and ginger and cook a few minutes longer or until chicken has cooked through.
  4. Remove pan from heat and let pan cool about 15 seconds (so noodles don’t instantly stick to pan and so sauce doesn’t evaporate), then add noodles and broccoli, whisk sauce and pour over top.
  5. Return pan to medium heat and toss noodles for about 1 minute. Sprinkle with sesame seeds and serve or divide into lunch sized portions and freeze.

 

Noodle Salad With Peanut Sauce in a Jar

Above: This salad is perfect for using any left over salad and veggie ingredients you have in your fridge. 

 

Ingredients

  • 1 packet Maggi Invisible Whole Grain noodles
  • 1 fresh beetroot
  • 1 carrot
  • 1 zucchini

Ingredients for the sauce

  • ¼ cup peanut butter
  • 3 Tbs lime juice
  • 2 Tbs tamari (or soy sauce)
  • 2 tsp honey
  • 1 tsp fresh ginger (grated)
  • 1 tsp sesame oil 
  • ¼ cup water

Directions

  1. Cook noodles according to the instructions on the packet.
  2. While noodles are cooking, prepare the veggies by either using a spiralizer or grating them. 
  3. Throw the dressing ingredients into a blender until smooth, adding more water until it becomes runny enough.
  4. Add the desired amount of dressing to the bottom of the jar, followed by the cooked noodles and then the veggies, pressing down to get as much as you can into the jar.
  5. Top with coriander or peanuts or simply leave as it is and seal the jar tightly.
  6. When ready, pour into a bowl, mix together, and enjoy! Will last in the fridge for up to 5 days. 

 

SPINACH NOODLE BAKE

Above: This recipes will keep in the fridge for around three days.

 

Ingredients

  • 3 packets of Maggi Invisible Whole Grain noodles
  • 7 eggs
  • 250ml cream
  • spinach
  • 2 spring onions
  • 1/2 cup grated cheese

Directions

  1. Preheat over to 180 degrees. Grease and line a cake tin baking paper. 
  2. Cook noodles as per instructions on packet. Drain, rinse under cold water.
  3. In a large bowl, beat eggs and cream together. Stir in spinach, spring onions and cheese then season with salt and pepper. Add noodles and mix well.
  4. Pour into prepared tin and bake for 50-60 mins until set. Cover top with foil if browning too quickly.
  5. Stand in tin for 10 mins, then turn out onto a baking paper lined wire rack. Serve warm or chilled in wedges.
