Ketz-ke Designer Jenny Drury Shares Her Favourite Recipe

Fashion and food often go hand-in-hand. If you love one you generally love the other. That’s why we thought it would be fun to catch up with some of New Zealand’s leading fashion designers and ask them to share their favourite recipes with us in our new series: Fashionable Food. This week, the super-talented Ketz-ke designer (and great friend of mine) Jenny Drury shares one of her favourite go-to recipes with us here.  Jenny says:

I’m a big baker and because everyone would expect me to share a baking recipe I thought for a surprise I would show that I can actually do more than BAKE!

This Annabelle White recipe is a regular in our house and will be an instant success at your dinner party too. 



Serves 4

4 x salmon fillets
2Tbs soy sauce
2tsp sesame oil
2 Tbs oyster sauce
1 tsp finely grated ginger
1 small clove garlic, crushed
2 spring onions, finely sliced
2 red chillies, diced and seeded
8 Tbs coconut cream

1) Preheat oven to 180 C. Spray 4 squares of foil with cooking spray and place a piece of salmon on each.

2) Mix soy sauce, sesame oil, oyster sauce, ginger and garlic together in a small bowl. Brush over salmon.

4) Pour 2 Tbs coconut cream over each piece of salmon. Wrap each into a parcel

5) Bake for 15mins.

This dish is perfect served on mashed kumara or creamy mashed potato with green beans or asparagus on the side.
