Keeping Summer Yummy With Delicious Nectarines

Stone fruits are back in season and because they’re here for a good time, not a long time, I’ve whipped up a few tasty treats with my favourite stone fruit – the humble nectarine.

The Yummy Fruit Company grows three types of nectarines over summer in their Hawkes Bay and Central Otago orchards: Hunnys (yellow flesh, sweet-eating); Classics (yellow flesh, traditional flavour) and Pearls (white flesh). All three have distinctive and unique flavours but one thing’s for sure – they’re all delicious at this time of year. 

So if you’ve never discovered the beauty of nectarines now’s your chance to enjoy this delicious fresh fruit. Oh and you’d better be quick too – the nectarine season runs from now until the beginning of March so don’t delay.

NECTARINE GINGER SMOOTHIE

This smoothie is balanced with healthy carbs, fats, and proteins and is not only good for you but tastes great too.

  • 1 cup nut milk (e.g. almond
  • 1  lemon 
  • 1 tsp ground turmeric 
  • 2 tsps fresh ginger (grated
  • 1 tbsp flaxseed (use ground flaxseeds if you don’t have a powerful blender
  • 2 tbsps nut butter  
  • 2  nectarines  
  • 2  carrots (grated) 
  • 1  frozen banana (chopped)

Method

Add the ingredients to a blender and blend until smooth – time will depend on speed and power of your blender but I blitz mine for around 20 seconds.

NECTARINE BUNDLES

These little zingy bundles are delicious and are the perfect healthy snack.

  • baby spinach leaves
  • 1 tsp extra-virgin olive oil 
  • pinch ground black pepper  
  • prosciutto  
  • nectarines (cut into wedges)

Method

Combine first 3 ingredients in a large bowl; toss gently to combine.

Arrange 3 or 4 baby spinach leaves at one end of one prosciutto strip. Place two nectarine wedges on top of rocket; roll up. Place bundle, seam side down, on a serving plate.

Repeat with remaining rocket, prosciutto, and nectarines.

GINGER NECTARINE SANGRIA

If you’re looking for a delicious new summer cocktail you’ll love this easy-to-make (and very moreish) simple sangria. 

  • 1 btl white wine (a pinot gri or similar
  • 1 cup Grand Marnier 
  • 4  nectarines (sliced
  • freshly grated ginger  
  • 1  lemon (or lime, sliced
  • 1 handful mint (and/or basil
  • 1 handful ice

Method

Stir all ingredients together. Chill until you’re ready to serve!

 You can tone down the alcohol content by adding ½ to 1 cup of sparkling water.
