Flat-Iron Steak with Feta Salsa PLUS Win A $100 Farmers Gift Card

With Summer in full swing there’s no better time than now to get back into the swing of delicious BBQs and fresh vegetables. Lately I’ve been spending more time than usual in the fruit and veg shop, obsessing over the massive seasonal eggplants and fresh stalks of vibrant asparagus. If you’re on the lookout for a healthy new meal option then you’ll love my favourite Flat-Iron Steak with Feta Salsa recipe. The trick to getting this dish right is choosing the best cut of meat. Silver Fern Farms has just launched a new Beef Flat-Iron Steak which is perfect because it has the Heart Foundation Two Ticks which means it’s lean and healthy but also delightfully tasty. It’s also guaranteed to be tender, tasty and juicy every single time. Paired with delicious, seasonal grilled veg to give it some texture, and alongside a deliciously creamy tangy feta salsa… I might even go so far as to say it’s the perfect summer dish!

I hope you enjoy this delicious meal as much as I did – it’s definitely a crowd pleaser, with lots of approving comments from my guests when I served it!

Flat-Iron Steak with Feta Salsa

Serves 4-6

Steak Marinade
Ingredients:

  • 3 lb. Silver Fern Farms Flat-Iron Steak
  • 1 cup soy sauce
  • 1 Tbsp. brown sugar
  • 2 cups water
  • 2 cloves garlic, crushed

Feta Salsa
Ingredients: 

  • 1 small red onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 ½ cups chopped Italian flat leaf parsley
  • 1 Tbsp. olive oil
  • 2 cups crumbled feta cheese
  • pinch of pepper

Directions: 

  1. In a 13×9” baking pan, mix together the soy sauce, brown sugar, water and garlic. Add the meat and marinate it for a maximum of 15 minutes.
  2. To prepare the salsa, combine all of the ingredients together in a medium bowl and mix together. Set aside and refrigerate until you are ready to serve the dish.
  3. Take the meat out of the fridge approximately 30 minutes before you want to cook it to bring it to room temperature.
  4. Heat your grill and cook to desired finish, for a beautiful medium rare this only needs 3 minutes on each side. Take off of the grill, place it on a plate and cover the meat with aluminum foil for 10 minutes to let the meat rest.
  5. Place the meat on a cutting board and with a sharp chef’s knife, cut the meat into thin slices at a 20 degree angle against the grain. This is a very important step as this slicing technique is what makes the meat tender.
  6. Serve each portion of steak with a generous spoonful of feta salsa and a side of grilled vegetables.

Grilled Vegetables

We used peppers and asparagus, but the sky’s the limit! You can grill eggplant, zucchini, onion… just use your imagination. Grilling brings out the natural sweetness in the vegetables, and this simple marinade can compliment any main dish.

Ingredients:

  • 3 red, orange or yellow peppers (or a mix), seeded and cut length ways into large strips
  • ½ lb. asparagus, trimmed at the bottom (to remove the woody part of the stem)
  • 2 cloves garlic, crushed
  • 2 Tbsp. lemon juice
  • 1 Tbsp. red wine vinegar
  • ¼ cup olive oil
  • salt & pepper to taste

Directions:

    1. Toss together all of the ingredients in a large bowl or a large re-sealable plastic bag and marinate for at least 30 minutes.
    2. Remove the vegetables from the marinade and grill for 10 minutes, turning occasionally to avoid burning.
