Fabulous Food: Tasty Tahini & Eggplant Dip

Welcome to the fifth instalment of our six part Fabulous Food series. I love great food and one of my must-have kitchen appliances is my stick mixer. That’s why I’ve decided to share with you six of my favourite recipes using this handy kitchen whizz.

TAHINI & EGGPLANT DIP

INGREDIENTS

1 large eggplant
1 large clove garlic, peeled and crushed to a paste with a little sea salt
1/2 tsp salt
100ml tahini paste
2 Tbs lemon juice
1-2 Tbsp finely chopped flat-leaf parsley

METHOD

  • Preheat oven to 200 degrees celsius.
  • Wash and dry eggplant and prick all over with a skewer to prevent bursting during cooking.
  • Place eggplant in the flames of a gas cooker, turning every few minutes with tongs.  Then put eggplant on an oven rack and bake for 20 mins or until very tender.  Remove from oven and cool.
  • Alternatively, cook in the oven for 45 minutes, or until tender.  Remove from oven and cool.
  • Cut eggplant in half, pour off excess liquid and scoop out the pulp.  Remove and flecks of blackened skin as these will impart a burnt flavour.
  • Chop pulp finely, pour off excess liquid again, then transfer to a bowl.
  • dd garlic, salt and tahini paste and whizz with a stick mixer for about 10 seconds (don’t overdo it) and then stir in lemon juice and most of the parsley.
  • Cover and refrigerate until required.
  • It will last for approx two days if kept in the fridge.
