Delicous Gluten-Free Walnut Slice PLUS Win A De’Longhi Multifry

I’ve been experimenting with a fab new kitchen appliance that not only cuts down cooking time but cooks things faster and a lot healthier too. It seems there’s nothing the De’Longhi Multifry can’t do. It cooks cakes, pizzas, meat, fish, stew and risotto (it even stirs the risotto while it cooks – winning!). One of the features I’m especially loving is the fact it makes french fries (which my boys love) using next to no oil AND they still taste great.

In an effort to put this nifty gadget through its paces I thought I’d whip up a tasty walnut slice as an afternoon treat. The result was not only delicious but super easy. Ingredients
  1. 250 g shelled walnuts
  2. 150 gr gluten free corn starch
  3. 4 medium eggs
  4. 200g butter (room temperature)
  5. 1 tsp baking powder
  6. 1 tsp vanilla essence
  7. 200g raw sugar
Instructions
  1. Chop the walnuts and set aside with approximately 50g of the sugar. Mix the butter with the rest of the sugar until the mixture is light and fluffy.
  2. Add the eggs one at a time, beating until the mixture is uniform. Then add the vanilla extract.
  3. Add the chopped walnuts, sugar and sifted gluten-free corn starch and baking powder.
  4. Remove the paddle from the bowl.
  5. Butter and flour the bowl and pour the batter in the centre, making sure it is level.
  6. Close the lid, set the thermostat dial to the cake position and press the on/off button.
  7. Cook for 45 minutes. Turn out onto wire rack and allow to cool before serving.
Notes
  1. If you're not using a Multifry simply bake the slice in a pre-heated 180 degree oven for 40 minutes.
