Delicious Caramelised Onion Jam Made Easy PLUS WIN A Cool Prize Pack

I’ve always loved the idea of making jam but the thought of spending hours in the kitchen boiling fruit to within an inch of its life has never really appealed. But when Chelsea sent me a few packs of their Jam Setting Sugar I was keen to see what all the fuss was about. It turns out this sugar really is a game-changer. Not only does it cut down on time (you only need to boil your fruit for a couple of minutes instead of hours) but it also  preserves the goodness of the fruit – winning! 

So with summer in full swing, and cheese platters regularly on the menu at my place I thought I’d try my hand at whipping up my favourite Caramelised Onion Jam.  Not only was it super easy to make but it’s the perfect little jar of deliciousness to have on hand in the fridge for adding to stir frys, jazzing up a plain burger and my favourite – spreading on toast with blue cheese. It’s also really inexpensive to make compared to what I usually pay at my local deli.

Caramelised Onion Jam
Serves 40
This jam is not only great as an accompaniment to burgers and char-grilled vegetables, but can also be added to stir-fry sauces or wok-tossed noodles to add a sweet and spicy flavour. It also makes the perfect addition to a simple cheese platter.

  1. 3 fresh chillies, halved
  2. 5 cloves garlic, finely chopped
  3. 3 Tbsp olive oil
  4. 6 medium brown onions, halved, thinly sliced
  5. 5cm piece fresh ginger, peeled, finely grated
  6. ½ Cup Chelsea Jam Setting Sugar
  7. ½ Cup rice wine vinegar
  8. 1 Tbsp lime juice
  9. 1 Tbsp fish sauce
  1. 1. Place chillies and garlic in a dry pan and cook over a medium heat for 5 minutes or until chilli skins start to blacken. Chop chillies and set aside.
  2. 2. Heat oil in a heavy-based saucepan over low heat. Cook onion, covering with lid, stirring occasionally for 45 minutes or until soft. Increase heat to medium. Add garlic and chilli mixture, and ginger. Cook, stirring occasionally for 25 minutes or until onion is pale golden.
  3. 3. Add Chelsea Jam Setting Sugar, vinegar, lime juice and fish sauce. Stir for 1 minute or until sugar has dissolved. Bring to the boil and boil rapidly for 2 minutes or until mixture has thickened and caramelised.
  4. 4. Spoon the hot jam into hot sterilised jars and screw on the lid to seal. Store in fridge for up to 3 weeks. Use within 3 days after opening.
