Often one of the trickiest meals of the day is lunchtime. For some reason I’ve always struggled to come up with healthy lunch ideas on the hop. So I decided to get a little creative to see what I could come up with.
So next time you’re looking for a healthy lunch without any fuss take your pick from one of the six simple and delicious options below. They all pack a powerful protein punch and are mouth-wateringly good too – promise!
1. TOMATO & FETA
Top your bread with sliced tomatoes and crumbled feta cheese. Sprinkle with dried oregano and Italian Herbs to taste.
2. PINEAPPLE & COTTAGE CHEESE WITH CHILLI & LIME
Spread your bread with cottage cheese and top with sliced pineapple pieces. Sprinkle Chilli & Lime seasoning to taste.
3. DATES, ALMONDS & CREAM CHEESE
Spread your bread with cream cheese and top with sliced almonds and chopped dates. Drizzle with honey and enjoy.
4. COTTAGE CHEESE & AVOCADO
Spread your bread with cottage cheese and top with sliced avocado. Drizzle with a little olive oil and season with salt and pepper.
5. APPLE, HONEY & ALMOND BUTTER
Smear peanut, almond, cashew — whatever butter you’re into — onto your bread. Top with thinly sliced apple and drizzle with honey and cinnamon. You can substitute the apple for a banana to mix things up.
6. HUMMUS CUCUMBER & CARROT
Spread your bread with a layer of your favourite hummus and top with strips of carrot and cucumber. I use a potato peeler to make long thin strands.
