With summer just around the corner I decided to up the ante and get a little creative in the kitchen. I was inspired by a delicious new range of Lisa’s Dips that arrived here at TSI headquarters recently. There are three flavours in the range including;  Greek Yoghurt Dip with Lemon, Mint & Butter Beans (my personal fave), Mexican Chipotle Dip with Coriander, Lime & Red Kidney Beans and Thai Sriracha Dip with Roasted Capsicum, Sweet Chilli & Butter Beans. If you like a bit of a kick you’ll LOVE the Thai Sriracha. The best thing about these dips (apart from them tasting great) is that they take a simple dish from zero to hero in an instant. So if you want to get a little creative this summer and wow your friends with some tasty treats from around the globe then you’ll love these simple and delicious recipes.

Dressing
  1. 1/3 cup rice vinegar
  2. 2Tbs sugar
  3. 1/2 tsp toasted sesame oil
  4. 1/4 tsp red chilli flakes
  5. handful of coriander
  6. pinch of salt
  7. Lisa's World of Flavours Thai Sriracha Dip
Salad
  1. 1 telegraph cucumber
  2. 1/4 cup chopped peanuts
Instructions
  1. In a small bowl, combine the rice vinegar, sugar, sesame oil, chilli flakes and salt.
  2. Peel and slice the cucumber and place in a large bowl.
  3. Drizzle the dressing over the cucumber and top with chopped peanuts and Lisa's World of Flavours Thai Sriracha Dip.

Ingredients
  1. Splash of olive oil
  2. 2 tins of corn kernels
  3. 1 clove garlic, minced
  4. 2 Tbs lime juice
  5. pinch salt
  6. 1 tin black beans, drained and rinsed
  7. 1 red pepper, seeded and chopped
  8. 1 smal red onion, chopped
  9. small bunch of coriander, chopped
  10. 1/2 cup feta cheese, crumbled
  11. Lisa's World of Flavours Mexican Chipotle Dip
Instructions
  1. Heat oil over medium heat in a large fry pan then add garlic and corn. Cook about 15 minutes, stirring frequently until corn begins to char a little. Gently toss with lime juice and salt.
  2. In a large bowl, combine corn, black beans, pepper, onion, coriander and feta. Top with Lisa's World of Flavours Mexican Chipotle Dip and serve.

Ingredients
  1. 6 zucchinis
  2. pinch of salt
  3. 1/4 cup all-purpose flour
  4. 1/4 cup grated Parmesan
  5. 2 cloves garlic, minced
  6. 2 eggs, beaten
  7. freshly ground black pepper, to taste
  8. 2 Tbs olive oil
  9. Lisa’s World of Flavours Greek Yoghurt Dip
Instructions
  1. Place grated zucchini in a colander over the sink. Add salt and gently toss to combine; let sit for 10 minutes. Using a clean tea towel, pat zucchini dry.
  2. In a large bowl, combine zucchini, flour, Parmesan, garlic and eggs; season with salt and pepper to taste.
  3. Heat olive oil on a large frying pan over a medium heat. Scoop tablespoons of the batter onto the pan, flattening wth a spatula and cook until golden brown - about 2 mins. Flip and cook on the other side.
  4. Serve immediately with Lisa’s World of Flavours Greek Yoghurt Dip.
