Healthy & Delicious Desserts To Satisfy Your Sweet Tooth

What’s not to love about nice cream? At its very simplest nice cream (a play on ice cream) is little more than frozen bananas blended up into a divine soft serve. But add in a few fab ingredients like coconut, dried raspberries and cacao and it’s like owning your own ice cream shop!

I’ve got a real sweet tooth so decided to experiment with different flavours and I’ve come up with  three healthy and delicious nice cream recipes. For all three recipes I used Almond Breeze Almond Milk which is a milk alternative made from almonds. It tastes great and because it doesn’t need to be refrigerated before it’s opened you can keep a stock in the pantry so you always have some on hand. I use Almond Breeze on my cereal in the morning, in my smoothies and it even makes a delicious latte.

MATCHA (GREEN TEA) NICE CREAM

MATCHA (GREEN TEA) NICE CREAM

Makes 2 servings

INGREDIENTS

3 ripe bananas

¼ cup Almond Breeze Unsweetened Vanilla Flavoured Almond Milk

2 tsp matcha powder

DIRECTIONS

Cut bananas into little small pieces and freeze for at least 3 hours or overnight. Let the frozen bananas sit out on the counter for 15 minutes to make blending easier.

Using a food processor, blend until it looks like mashed potatoes. Add matcha and almond milk and blend until it looks like soft serve ice cream. Enjoy on its own or top with toasted coconut chips.

 

OAT & RAISIN NICE CREAM

Above: Add a dash of rum for a delicious Rum & Raisin taste sensation.

 

OAT & RAISIN NICE CREAM

Makes 2 servings

INGREDIENTS

3 ripe bananas

⅓ cup oats

¼ cup raisins

¼ cup Almond Breeze Unsweetened Vanilla Flavoured Almond Milk

½ teaspoon cinnamon

INSTRUCTIONS

Cut bananas into little small pieces and freeze for at least 3 hours or overnight. Let the frozen bananas sit out on the counter for 15 minutes to make blending easier. Place frozen banana chunks, oats, raisins, almond milk and cinnamon into a food processor.

Pulse/process until smooth and creamy. You may need to turn off the motor and stir the mixture a couple of times while processing.

Place into one or two bowls and serve immediately.

 

CHOCOLATE CHIP NICE CREAM

CHOCOLATE CHIP NICE CREAM

INGREDIENTS

3 ripe bananas

¼ cup Almond Breeze Unsweetened Vanilla Flavoured Almond Milk

1 Tbs maple syrup (or 2 medjool dates, pitted)

2 Tbs raw cacao powder

2 Tbs cacao nibs

your favorite toppings: I used freeze dried raspberries, coconut and cacao nibs

 

INSTRUCTIONS

Cut bananas into little small pieces and freeze for at least 3 hours or overnight. Let the frozen bananas sit out on the counter for 15 minutes to make blending easier.

Add the banana and almond milk to a blender or food processor and pulse, then scrape down the sides. Keep doing this until the mixture becomes creamy and ice-cream like. Then add the rest of the ingredients (except the toppings) and pulse/blend until well combined. Add your favorite toppings and enjoy!
